
Tonights Dinner Decided From


This recipe from Amanda at I Am Homesteader is one of my favorite pantry meals. I almost always have some frozen hamburger meat in our freezer for last minute meals when work gets crazy. This recipe is nice and simple with relatively few ingredients that I always have on hand. This is perfect easy recipe for a busy weeknight meal that provides just the right amount of kick.
When you add in a perfectly jammy soft boiled egg this ramen recipe gets taken to the next level. The original recipe called for 6 minutes to boil the egg before cooling, but to make sure the whites are cooked through I would suggest cooking to 7 minutes.
I would recommend making other variations to really pack some flavor. I think the hamburger meat can get a little lost with 4 packets of ramen, so I typically only use three. Also try adding some extra chili garlic sauce. I always double or triple the amount of chili garlic sauce as that is what’s providing much of the spice and flavors.
To make this a complete one pot meal, I usually add in some broccoli or other vegetables. You are also going to want to double the amount of green onions as well to maximize the flavors and textures. Not a fan of beef? Easily substitute ground chicken, pork, or even tofu. Get crunchy. Add in some sauteed carrots, or chopped water chest nuts, or even top with chopped roasted peanuts.
This might not be the fanciest meals that I make, but this is one of my go to’s when I know I’m not going to have time to make dinner for a few days. This recipe comes together with items already stocked in the pantry. It keeps well for leftovers for busy week nights. And it is easily adaptable to your own flavor and pairing preferences.
All in all, I think this recipe deserves a shot the next time you decide to make something outside of your usual family meal rotations. Even the meat lovers out there will enjoy this. Without a doubt this is the perfect recipe for Meatless Monday. The flavors in this recipe are incredibly robust for a vegetarian dish.
