
Tonights Dinner Decided From


Tonights dinner is another killer recipe from Chungah Rhee at Damn Delicious. These Mexican Street Tacos are hit on any night of the week let alone Taco Tuesday. These Mexican flavors are the perfect way to close out the summer with a bang. This is without a doubt my go to taco recipe. This is also one of the easiest recipes you can make. The tasty marinade makes for perfectly tender and flavorful steak tacos. Try this recipe for you next taco night for a well seasoned, loaded with Mexican flavor with just the right amount of heat.
With this recipe essentially being a marinade there are not of whole lot of tweaks to make. However there is one issue that I run into every time when I brown the steak. After it is marinated the steak has a tendency to release A LOT of liquid once you start cooking. This can the steak to get more of a boiled/simmered texture instead of the nice char I look for in a great street taco. To get around this make sure to drain as much marinade as possible from the steak. Then don’t be afraid to drain your skillet a few times to avoid excess liquid.
You could also avoid this problem all together by quick searing the steak on a grill. Or if you have access to a smoker, consider smoking the skirt steak prior to cutting up then quick reverse sear.
If you can stand the heat, I like to top mine with El Yucateco XXX Hot Habanero Hot Sauce. To add some more subtle heat and flavors consider adding a few chopped chipotles in adobo sauce. Or even just a tablespoon or two of the adobo sauce. This will give you a nice smokey chipotle flavor to your steak tacos.
Other than that minor issues this recipe is perfect. Serve on lightly toasted flour or corn tortillas. And of course finish with fresh cilantro and limes. We prefer white onion here at the Dinner Decided, but some people prefer red onion.
