This grilled chicken recipe from Jeremy Klae at Chicken Fried Kitchen is not your ordinary grilled chicken recipe. Be sure to try this recipe when you need to change up your regular barbeque chicken routine. It is easy to follow and has nice hints of citrus along with the smokey tones from chipotle peppers in adobo. Be sure to try this grilled recipe for some perfectly smokey and spicy chicken that only takes a few minutes to prepare. After marinating, fire up the grill and serve with your favorite Mexican or bbq sides.
The first few steps in this recipe call for you to butterfly the chicken. While I agree that this will allow for the chicken to cook more evenly. However, in my experience this will quickly dry out the chicken over high heat such as a grill. I left my chicken breast whole and the result was a nice juicy chicken breast.
The next step is probably the most important. If you plan on making this recipe I would try and plan ahead so you have time for a proper marinade. Of course the chicken will be full of flavor if you only marinade for one hour. Ideally though, you want the chicken in the marinade the night before. The citrus will help tenderize the chicken overnight.
Lastly cook the chicken how you are most comfortable or what makes sense for you at the time. This recipe calls for the chicken to be grilled which is only going compliment the heat from the adobo sauce. You could easily bake, cook on the stove top, or even sous vide the chicken as well. No matter how you decide to make it, this recipe makes some great smokey and spicy chicken. Then serve with your favorite ingredients. To serve, eat the chicken as is, or shred and put in tacos or on top of a salad. Tonight I served with fresh corn and zucchini topped with similar spices used in the marinade. Beans of your choice also would work well here.
