
Tonights Dinner Decided From


Tonight we had a dinner recipe from The Mediterranean Dish. Suzy Karadsheh has an amazing website with some really refreshing Mediterranean Recipes. Her Italian-style chicken skillet recipe is a quick and easy dinner that comes together in all one pan. This recipe has some really bright notes thanks to the addition of the white wine and lemon. This you next go to recipe that is both elegant and elevated compared to your typical dinner recipes.
After making this a few times, there are a few tweaks that I would recommend to get the most out of this recipe. One problem with dishes made in all one pan is that it is easy to ruin some of the textures that you are shooting for. The original recipe calls for you to lightly dust the chicken with seasoning and flour. First you brown the chicken and develop that nice texture. Then the recipes later calls for you to add the chicken back to the broth to finish cooking. If you do this you will get a soggy textures to the chicken. To avoid this, I usually cook the chicken all the way through at the beginning, or even sear and finish in the oven while the rest of the dish comes together. This will give you a nice crips texture to the flour coating on the chicken.

Other than the method for cooking the chicken I made a few tiny changes after making this a few times. After adding flour to the mushrooms and tomatoes I will also add a splash of broth. Then to keep the tomatoes and mushrooms from swimming in the liquid I cut down on the amount of broth added. I usually add about 1/3 cup instead of 3/4 cup. I usually add some fresh diced garlic to the mixture as well. Then finish with zested lemon over the top prior to serving.
This recipe is going to be the easiest elevated dinner recipe in your regular rotation. But it also needs some things to go along with it. Tonight we had mushroom risotto. But it will go great with some roasted potato wedges. You can even add a splash of lemon juice at the end for some cohesive flavors. I haven’t made this recipe yet, but The Mediterranean Dish also a tasty looking spaghetti dish that I think would go great with this recipe.
This recipe is beginner friendly and easy to execute and should be your next dinner dish. This recipe is fairly flexible. Add some spinach or other vegetable as suggested. Finish the chicken in the skillet or in the oven to maintain that nice crunch you spent the time to develop. However you adapt this recipe to make it you own I guarantee this will be the easiest elevated dinner recipe in your rotation.
