Tonight’s dinner is from Creme De Le Crumb by Tiffany. Creme De Le Crumb is an impressive website with all sorts of recipes to choose from. Her one pot Spanish Chicken and Rice has to be one of the most popular, and commented on recipes I have ever seen. Currently there are over 1100 comments and a solid 4.9 rating. Everyone seems to love her flavors.
The flavors here are really great. My wife claimed this was the best rice I have ever made. However, despite this enormously popular recipe I do think a few tweaks are needed. Firstly, as the recipe was built for simplicity by utilizing one pan, I believe this can overcook the chicken and give it an unwanted texture. To get around this I would recommend cooking the chicken separately. Whichever way you are most comfortable cooking chicken would work. You could easily cook the chicken in a pan, oven, or even grill for instance. To simplify the cooking process I cooked the chicken with my sous vide at 158° before searing in a pan.
Other then cooking the chicken separately, there are not really any adjustments that need to made. If you do end up using chicken breasts instead of thighs, you will likely need to make 1.5-2x the original spice mixture to have enough leftover for the rice. I have made this with both Jasmine and Basalt rice and both were excellent.
If you like to garnish your meal with lemon, you will need a total of 2 lemons. The original recipe calls for half of 1 lemon to be juiced into the rice, and the other half used for garnish.
In conclusion, this is a fantastic recipe from a great website that has hundreds of other options for you to choose from. My very picky 5 year old that lives on dinosaur chicken nuggets even made compliments and had two helpings.
