
Tonights Dinner Decided From


I followed the recipe from Dishing out Health. The original author is Jamie Vespa. This Balsamic Portobello Steaks with Butter Mash recipe is a perfect recipe for meatless Monday. It is hearty, balanced and guilt free.
Second time I made this easy dinner from Dishing out Health. I needed something light after vacation. This recipe didn’t disappoint. This is the second time I have made this recipe, so I made some minor changes. I skipped the tomato paste as I didn’t have any on hand. I also added a dash or two of onion powder. Next time I make I would also add just a little bit more salt to the seasoning. To cut down on the calories I also used just enough EVOO to coat the mushrooms. My recommendations would be to start the garlic about 15 minutes before putting the mushrooms in the oven. The butter bean mash was really good, could definitely use this recipe to sub for mashed potatoes. One mistake I did make was trying to “mash” them in my food processor. I ended up having to use my Ninja blender.
Other variations that I think would be really good to add some fresh rosemary for added savoriness. You could also brush the mushrooms with sauce from canned adobo peppers for an added kick. Pair this recipe with you favorite veggie. Broccolini is one of our favorites, but side salad, asparagus, broccoli, roasted carrots would all be really good here.
Lastly, I think the cook time for the mushrooms is little too long. I ended up cooking for about 10 minutes, flipping them, and cooking for another 10. I ended up making five portobello caps to share between my wife and I. Make sure you don’t over marinade the portobellos. About 10-20 minutes to avoid them getting too salty or soft.
All in all, I think this recipe deserves a shot the next time you decide to make something outside of your usual family meal rotations. Even the meat lovers out there will enjoy this. Without a doubt this is the perfect recipe for Meatless Monday. The flavors in this recipe are incredibly robust for a vegetarian dish.
